What We Did.
We have re-designed our ceramic coffee pour over cone. We created delicate ridges on the inside that add to both the beauty and functionality of the Cimarron Coffee Pour Over’s design. The exterior appearance of the cone will remain the same. We think that the new ridges will not only improve the functionality of the cone and the resulting cup of coffee that it makes, but that it will also make the cones more attractive by adding graceful lines to the design.
How Does It Work?
The ridges hold the paper filter away from the surface of the cone enough to allow the water to pass through the bed of grounds more uniformly. This keeps the water evenly distributed amoungst the grounds instead of encouraging channeling. Channeling is where the water finds a smaller path through the grounds to the bottom of the filter. This can happen when the filter paper is clinging to the inside surface of the cone. When that happens, the bottom is the only place where the water can pass through the paper adequately. This channeling causes the over extraction of a small portion of the grounds that most of the water is traveling through to get to the bottom while leaving the rest of the grounds under extracted which often creates an unbalanced and/or bitter cup.
What’s Next For The Coffee Pour Over Cone?
We need to glaze the prototypes and give them a final fire in the kiln. Then we will test them to ensure that they make an outstanding cup of pour over coffee and that they add to the beautiful, sculptural, handcrafted design that has received so much attention.
